Week 5 Day 4

I have a short recipe for you and some quick updates on my week! Scroll to the bottom for the recipe.

I bought some Walden Farms chocolate syrup and today I actually tried it. It is INCREDIBLE! I think next week I might get some crepes or chocolate pancakes so I can use it more - all I've tried it with now is my coffee :)

I have really amped up my exercise. Last night I walked with a friend for 40 minutes and did 90 crunches (which I've done a couple times now). It was rough as the second time you do crunches is always harder than the first - and my old appendectomy scar seized up and gave me a charlie horse. I doubt that those muscles will ever be the same again - it really is an odd feeling getting a charlie horse in your abs. Other than that tho I feel amazing! I feel as if the weight is coming off again. Yesterday I had a moment where I nearly through my veggies out the window. I didn't but I did cry. I am very discouraged this week (hence working way harder at exercise) and despite all the encouragement (especially from my partner in crime <3) I am so cranky. I was told that during that first phase you have some serious doubts and  it can make you cranky...so this must be it. Sigh. Hoping that once I start my new job that cranky Kristen will be replaced by happy Kristen!

Recipe -
Lemon Garlic Chicken!
What you need - 
glass pan
tin foil
EVOO
minced garlic
one lemon - juiced
2 chicken breasts
salt and pepper

what you do - 
half devoured - mmmm
preheat oven to 400 degrees - coat bottom of glass pan with evoo (I usually take a paper town and spread it around absorbing any extra). In a small skillet put about 2 tsp of EVOO and 1 tbs of garlic. Brown for 30 seconds and add 1 lemon's worth of lemon juice. Bring to a boil and add salt and pepper and set aside. Place chicken breasts in glass pan the pour mixture over the top. If you're brave you can inject it into the breasts as well. Cook covered with tin foil for 15 minutes - uncover and cook for another 5-10 minutes. Enjoy with spinach or greens. Use left over sauce for dressing or to dip pieces of meat in. YUM!

I'm sure there is a cranky factor with the diet but honestly lol, you're STILL a women. We are STILL bound to cranky, emotional, 'sad' 'frustrated' days lol. Kudos to you for keeping it up. Not an easy thing you are doing but totally do-able if you keep going!

And one thing I learned from all the Cross Country training and watching my brother in college train... the beginning is always the hardest ALWAYS... ask Michael sometime. That first mile is always harder then running 15 in a row down the road. So keep plugging away! As you keep getting more and more in shape you will suddenly notice one day how GOOD it feels and how much less exhausted and crappy you feel haha.

Anyways! If you ever want to go for walks (too bad you aren't closer) I'm totally up for it. My girls and I love to do walks and I like to stay in shape too!
