Day 82, Recipe!

Veggie and Turkey stuffed Red Peppers
What you need -
4 red peppers (green work well too, depending on your preference)
1 lb of ground turkey
1/2 a cup of mushrooms
1/2 a cup of celery
1/2 a cup of tomatoes
1/2 a cup of onion
garlic powder
salt and pepper
2 tablespoons of olive oil
The lowest sugar/fat/carb tomato sauce you can find.  (This was tricky, I finally did find one that had 1 gram of sugar in it and went with that. Since I'm baking it I figured it would all even out. The brand I found was at Wal-Mart and is pictured below)

What you do -

 Preheat oven to 375. De seed and de core red peppers, cutting them lengthwise. Chop veggies (onion, celery, tomatoes and mushrooms) as small as you can but not minced. Place these in a skillet with EVOO and sautee until soft. In a medium sized bowl mix turkey, egg, garlic powder and salt and pepper. Add sauteed veggies and mix.




Stuff peppers with turkey/veggie mix and place in ungreased casserole dishes. Pour (or in my case spoon) tomato sauce on to the tops of peppers covering the mixture. Those of you who can enjoy cheese, sprinkle with Feta Cheese. Bake 50-60 minutes (if using cheese the last ten minutes spinkle with Feta).
