"Chips" and Salsa!
What you need -
1 or more cucumbers (chips)
1 - 2 bell peppers any color
1 can chopped tomatoes - I used two because I adore them!
1/2 tsp cumin
2 tsp coriander
1/2 to 1 tsp garlic powder or fresh chopped garlic
sea salt & black pepper to taste
1 packet of splenda or other sugar substitute.
Raw onion - I used about half of one.
Optional ingredients that I used -
cilantro
1 or 2 shakes of tabbasco sauce
Sliced jalepenos
lime juice to taste.
What you do -
Slice veggies. Cukes should be sliced into thin slices but not so thin that they buckle under the pressure. Peppers, onions and jalapenos can be sliced rather small. Jalapenos need to be smallest. In a pan put about 2-3 tablespoons of olive oil. You'll need to watch this part carefully so you don't burn the spices. Add in dry spices and any additional spices you feel need to be in the mix. Heat briefly with oil and add onion, and peppers (jap and pep). Cook until you get the desired texture, usually until tender.

Now for the entrees. I put it as a topper on my burgers and then on my eggs in the morning. Both ways were yummy! And I still have a whole half a jar left! You will love it!
