"Potato" Salad
What you need :
1 head of cauliflower
Salt and Pepper
about 1/4 a cup of chives, pickles and/or onions
2 hard boiled eggs
Walden Farms coleslaw dressing or Light mayonaisse
Mustard (your favorite kind)
What you do:
Cut cauliflower into sections and steam it. This part is complicated. Steam for about 15 minutes if you have a collinder and pan for the stove. If you are steaming in the microwave all you need to do is put it in a large ziplock baggie with a little water and leave about a fourth of the baggie un-zipped. This will steam efficiently, but it is also VERY hot when it's done. Only takes about 3-4 minutes to cook. You should be able to put a fork through the florets easily. Not mushy, but not still crunchy either. Just like you would if you were making potatoes. Rightis a picture of mine when it's done. Next rinse in cold water until it is cool to the touch and put on paper towels to dry.
While you are steaming you can cut up your add ins. Chop chives, pickles, onions and eggs (you can also use bacon pieces, scallions, celery, green peppers, you name it!) into small pieces. When the cauliflower is dry and not dripping any longer add your cut up veggies and eggs and toss lightly until mixed well.
Next add your dressing (I don't like to measure but the Walden Farms will probably measure around a half a cup to 2/3 a cup). I also add salt and pepper to taste (about 2 tsp of each) and cayenne pepper.

The final picture is of my meal. I bought the Walden Farms BBQ sauce but to be honest I'm not a fan. It's too tangy, not sweet enough, but that's what you get when you can't eat sugar. :P

Calf - minus 1/4 inch
total lost 18 pounds and 6.25 inches
BMI - 45
