Mexican Fish Salad
Inspiration - Better Homes and Gardens fish tacos recipe
I honestly didn't know if I could pull it off but it looked so dang good!
What you need :
Cabbage
Cucumbers
Limes (i just bought the little juice thingy shaped like a lime-it's cheaper)
Walden Farms Coleslaw dressing (about a half a cup)
Chilli powder (1tsp)
EVOO
Tilapia (or catfish or whatever fish you like!!)
Non diet options -
Tortilla Shells
Carrots
Flour
Veggie oil
How to:
Cut fish into small bite size pieces and set aside. In a bowl mix dressing, about 2 limes worth of juice and the chilli powder (if you are planning to bread the fish remove about 1/3 of the sauce).
Non diet - bread fish in a bowl or baggie full of flour
Diet - head straight to cooking, place EVOO in a pan and cover fish for 2-4 minutes or until fish flakes and any sauce seems bubbly or starting to crisp.
While fish is cooking you can cut cucumbers and cabbage (and any other veggies you like) into strips.
When fish is cooked remove an excess sauce and place on top of veggies. Squirt some more lime juice on top and enjoy!
Non diet - place in tortilla shells and add some more sauce to your breaded (make sure to fry it) fish. Add jalepenos if you want some spice. ENJOY!

It's starting to get way easier for me to eat this stuff now that I'm creating my own recipes. I think God has stepped in a little too. The other night I dreamt that I was eating pancakes and pizza ( I hope I wasn't sleep walking too :)) I think that was the big guys way of giving me a break. Dreams are guilt free yaknow.
