Voumoulash
I renamed it because goulash has noodles and stuff I can't have. So why torture myself. This is a veggie/meat goulash; VouMoulash!
What you need;
crockpot OR skillet
4-5 celery stalks with leaves - chopped
1/2 an onion chopped
either 1 can of diced tomatoes drained or 2 fresh tomatoes de-seeded
1/2 tsp of garlic powder
salt/pepper to taste
1 bag of coleslaw mix or two cups of cabbage (purple and green) cut into thin strips.
1 lb of ground beef - browned
1/2 cup of water
Crock pot - mix browned beef and cut veggies in crock-pot, sprinkle on seasonings and mix again. Add water and turn on high for 3 hours. Add about 1/4 a cup more water for more tender veggies.
Skillet - brown beef with seasonings, add water and onion. When onion is cooked add celery, when celery is cooked add coleslaw. EAT!!!
It's super easy! I used one fresh tomato (because I'm not really allowed to have tomatoes more than once a week) and a coleslaw mix (it had carrots in it....there weren't any without and I picked them out :P). It also didn't call for the use of a crock pot but I'd rather be able to sit and enjoy my day than stand over a skillet so I sort of experimented. Just checked the stuff every 30 minutes or so to see how it was going. Waited until the celery was soft like it would be in soup. Pictures of my pre cooked and after cooked Voumoulash below.
